How To Dry Peppers And Preserve Them

Source : instagram

You have made the dish you want, and now you see the leftover ingredients in your kitchen. Among such ingredients, one is pepper. And throwing it can not be a good thing.

So, how about drying peppers and preserving them? The process of doing this is very simple and efficient. Without any further ado, let's jump right into it.

1. Air Drying (Whole Peppers)

Let us start with some traditional effective medicine for dry pepper. This method can work like a charm in places with low humidity. You can start by selecting the fresh peppers and collecting them. String them together with the help of a threat, create a garland, and hang them in a well-ventilated area.

Before choosing a location, check if it has proper airflow and indirect sunlight. The area should also be warm and dry, so the place near the kitchen or sheltered porch is one of the best places. Hang them for one to several weeks and look for any signs of mold.

2. Sun Drying

When you ask people in farmhouses how to dry pepper, many will answer that it's sun drying. The process is an effective method among other natural ones. All it requires is ample sunlight and a low humidity level.

After selecting the ripe pepper free from any spoilage, wash it exhaustively and gently pat it dry with a clean towel. Now arrange them in a single row and check that they aren't touching each other. The location you choose should have direct sunlight for 4-6 hours, so an east-face or south-face window can be ideal.

3. String Drying

Yet another traditional method is to string peppers together. This method not only dries peppers but also creates an appealing display. In this process, commonly chilli peppers, jalapeños, and other small-sized peppers are used.

First, you wash them minutely and then dry them out gently. Now, take the string and cut it according to the desired length. Also, keep the space 2-3 inches apart. Now sew them using a needle and string them together.

As the process is completed, hang them in a warm and well-ventilated place. The process can take around four weeks typically, so check out regularly.

4. Use Dehydrating Agent

Dehydrating is a fruitful way of preserving peppers and storing their flavor for a long period of time. In this method, you can use food-safe dehydrating agents like silica gel or calcium chloride. These substances are known for their ability to absorb moisture.

After collecting, washing, and drying the peppers, you should keep them in an airtight container. Arrange the peppers in a single layer on top of the dehydrating agent. Remember that the peppers should not touch each other to allow for proper moisture absorption.

5. Salt Drying Method

Yet another similar process to the dehydrating method is salt drying. But it comes with a twist because this process helps to enhance the flavour of the pepper. Collecting, washing, and gently patting them dry, you can cut them into smaller sizes or keep them whole, depending on your preference.

Now coat the peppers with a thick layer of salt, ensuring all surfaces are covered. The salt is known for its natural ability to absorb moisture. After coating, place them on a plate and let them sit for 2 hours.

During this time, you will notice a pool of moisture forming at the bottom. When you complete the process, immerse the peppers in cold water to remove excess salt. Then, gently dry them and let them air dry quickly.

6. Microwave Drying

If you have limited time, the microwave can be the best option for drying pepper. But, this method is suitable for a small amount of pepper. You wash and dry the pepper. Now, cut it into small pieces or rings and arrange it in a single layer on a microwave-safe plate.

If you want the best result, use a paper towel beneath to absorb moisture and also leave some space between the pieces. Set the microwave on low power to prevent overcooking and microwave for 30 seconds to 1 minute. Turn the peppers after every 1 minute and continue for 10 minutes.

7. Oven Drying

If natural methods haven’t fully dried your peppers, you might want to try something more advanced. The oven can be a great help. Set the oven to a low temperature, around 120-135°F. While the oven is heating, you prepare the pepper.

Slice the peppers into small pieces and place them on a baking sheet. The process takes 4-6 hours, so look out every 30 minutes. It can help to dry the peppers evenly. When the peppers are dry and brittle with a wrinkled structure, they have dried.

8. Dehydrator Method

You have a bunch of peppers and have no idea how to dry them quickly. Well, the dehydrator method is perfect for you. After the basic process of washing and halving them, place the peppers in the dehydrator tray.

Put them in the food dehydrator set at 135°F. If you're using sliced peppers, it's better to keep the skin side up for more even drying. Continue the drying process for 12 hours, checking them periodically until they are completely dried.

9. Smoking Peppers

Pepper is known for its hot and spicy flavor. To get the best out of those leftover peppers, it is better to use the smoking method. This process is suitable for small or large batches. Prepare the peppers to dry and then start with the smoking setup.

A dedicated smoker like a grill or a large pot with a lid is suitable. Set them up in indirect heat, keeping coals on either side, then place the container on the hot side. Arrange the peppers on the grill grate, making sure they do not touch each other.

Cover the smoker and maintain the temperature around 200°F for even smoking. Depending on the size of the peppers and the intensity of the smoke, the process can take a few hours.

10. Car Trunk Drying

Can we be creative in drying peppers? Well, yes, we can use the car trunk. The process is also effective for tropical regions, as it creates a natural dehydrating environment. First, arrange, wash, and dry the peppers. Then, keep them on a single tray or paper bag.

Place them in the trunk of your car and position them so that they get maximum exposure to the sun. Close the trunk and leave it for specific hours. The interior of the car can reach between 120°F and 160°F. But look out time and again to check the progress.

11. Alcohol Infusion

Apart from using the car trunk, you have another way to use your creativity. Alcohol infusion preserves peppers and improves their flavor profile. In this method, you submerge fresh and ripe peppers in alcohol.

Give it time to extract flavor and moisture for a long time. Take a glass jar and place the pieces of pepper inside. Please remember that strong alcohol effectively extracts flavor. Then, seal the jar tightly and keep it in a cool and dry place for four weeks.

12. Freeze Drying Peppers

After all the methods, you might want to use a more advanced way. Freeze drying is an advanced method for drying peppers. The process involves freezing the peppers and reducing the surrounding pressure to allow the frozen water in the peppers to vaporize.

The only part about this process is the requirement of advanced equipment like a freeze dryer. You put the sliced peppers on the dryer's tray and set it to the optimal setting. Depending on the peppers' moisture content, the whole process takes around 48 hours.

The process is complete once the peppers are lightweight and crispy. Now, keep the peppers in a vacuum-sealed bag in a dark place.

How Long Do Dried Peppers Last

The process of drying peppers aims to preserve them for a longer period. When you follow the above-given steps, you get dried peppers, but now comes the question; How long can we expect to keep them intact?

Generally, we can say their quality can last up to three years. However, the ideal conditions can help to keep them for five years or more. The key factors that influence their shelf life are moisture, light, and air exposure.

Storage Tips

  • The first thing to do is keep them in a place with low humidity, somewhere dry and cool, as these are the conditions they thrive in. Store them in an airtight container away from direct sunlight to help maintain their potency.
  • The second thing you can do is use glass jars or airtight plastic containers with sealed lids. These protect dried peppers from unwanted air and humidity.
  • Label and date the container to indicate the type of pepper and the date of storage. This will help you track their freshness and use them within their optimal period, around 1 to 2 years.

Are Dried Peppers Hotter Than Fresh?

Yes, dried peppers are hotter than fresh ones. This is due to the increased amount of capsaicin in them. When peppers are dried, the moisture is reduced, which increases the flavor.

The dried peppers are hotter due to the higher content of capsaicin. Besides, capsaicin is oil-based, so it remains concentrated in the dried form. Although dried peppers have more capsaicin, the heat levels are different. It depends on how they are consumed and the context in which they are used.

To get the best out of the drying pepper methods, proper storage is crucial. While the above ways can be helpful, stay with us for more effective methods.

Vacuum-sealed Container

Do not get confused with the name; in simple words, it is meant to use jars, bags, or containers that are airtight. These can shield air exposure that can cause the jars to lose flavor and become brittle over time.

For the best airtight container, you might want to choose a glass jar. The reusable plastic bag may not provide a complete seal against moisture. Fill the container tightly and label it to keep track of the batches.

Store in Cool and Dry Place

After drying peppers and keeping them in an airtight container, look for a cool and dark corner in the cupboard or pantry. These places keep direct sunlight and heat away. They provide the required amount of light and heat for dried peppers.

Also, remember that refrigeration can increase shelf life, but it is not ideal for peppers. Cold temperatures and changing humidity in the refrigerator can cause them to lose their flavor.

Maintain The Cool Temperature

The cool temperature and low humidity levels are perfect for storing peppers. Heat can cause the loss of capsaicin. Try to place them away from any heat sources and maintain a cool temperature.

It is better to store them in a basement or cellar, as these places are known for their cool and stable humidity levels. Keep the temperature consistent for the peppers throughout.

Look Out if the Pepper is Dried

Regularly checking the dried peppers is a must. The dried and wrinkled texture is a sign that they are properly dried. When you squeeze these peppers, they should crumble. Residual moisture can cause mold growth and spoilage.

For better results, use a fast drying method like a dehydrator or oven, and dry them immediately for optimal results.

Check for Signs of Spoilage

Before you store them, you are also required to check their quality. Even after proper drying, dried peppers are prone to spoilage. Look out for signs of moisture and mold development in the container or on the peppers.

If there are any insect activities, discard these peppers. Smell the peppers; if they have a strong, off-putting odor, they are not good to store. Stored peppers can last more than a year, but ensure their storage conditions remain ideal.
